The following is a recipe for making pide for six servings.


- 4 cups all-purpose flour

- 1 sachet (1/4 ounce) dry instant yeast

- 1 1/3 cups warm water

- 1/2 cup warm milk

- 1 teaspoon butter/margarine

- 2 teaspoons of olive oil

- 1 teaspoon sugar

- 1 teaspoon salt

- 1 egg yolk

- 1/2 cup plain yogurt

- 1 teaspoon sesame seeds

- 1 teaspoon black cumin seeds

How to make:

1. Pour the flour into a basin or large bowl. Then sprinkle the dry yeast on top and mix with your hands until evenly mixed.

2. Add warm water and stir lightly with a spoon. Next, add milk and stir again.

3. Add butter/margarine and olive oil then stir briefly. Finally, add sugar and salt then mix until smooth.

4. Time to knead the dough. You can use a mixer or your hands. If using a mixer, knead the dough for about 10 minutes. If by hand, knead the dough for 15 minutes.

5. Transfer the dough to a floured surface and knead again for about five minutes. The dough must be soft. If it looks still hard, add a tablespoon of olive oil, knead until smooth.

6. When it is smooth, transfer the mixture to a warm container. Cover with a damp cloth and ferment/allow to double in size for about two hours.

7. After that, open the cloth cover and take out the dough. Remove to a floured table. Divide the dough into two parts.

8. Form the pide bread using your hands. Make each loaf oval/round and flat, about 1 1/2 centimeters thick

9. Place each loaf on a baking sheet/metal tray that has been lightly dusted with flour.

10. Using a floured knife, first cut about 3 cm from the edge to make a circle around the bread. Then, inside the circle, make diagonal cuts in opposite directions to create a diamond pattern. Do the same with the other bread.

11. Make the spread: Beat the yogurt and egg yolk until evenly mixed. Coat the surface of the bread with the yogurt and egg mixture using a pastry brush.

12. Sprinkle black cumin and sesame evenly over the surface of the bread.

13. Bake the bread in the oven at 225 C. Also put a small baking dish filled with water on the floor of the oven.

14. Bake for about 30 minutes until the surface is golden brown.

15. Remove the bread from the oven. Hot pide is ready to be served.

Serve the pide warm, topped with yogurt sauce or dip. The aroma of spices will be felt when this pizza is cut into pieces.
