Laziji is a typical Sichuan spicy chicken dish. This dish consists of pieces of chicken that are marinated and then fried. Usually it is made by stir-frying, using dried Sichuan chili spices, spicy bean paste, Sichuan peppers, garlic and ginger.
Toasted sesame seeds and sliced spring onions are used to garnish the dish. Customers at Chinese restaurants generally use chopsticks to pick up pieces of chicken and leave the chili in the bowl.
Laziji originates from near Geleshan in Chongqing. The restaurant owner uses small free-range chickens as the main ingredient, from a nearby farm.
Marinating Ingredients
- 1 chicken, cut into small pieces
- 1 tablespoon Shaoxing cooking wine
- 1 tsp salt
- 1 tsp pepper
- 1 egg yolk
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 tbsp soy sauce
Stir-Fry Ingredients
- 1/2 piece of ginger
- 1 clove of garlic
- 1 red onion 1 clove
Prepare all the stir-fry ingredients and cut them into small pieces.
Stir-Fry Ingredients
- 8 cayenne peppers, remove the stalks
- 4 curly chilies
- 2 large red chilies, seeds removed, sliced roughly into strips
- 1 handful of dried chilies
- 2 handfuls of sechuan pepper
- 1 tbsp sechuan pepper oil (optional)
- 1 handful of sesame seeds
- 1 tbsp sesame oil
- 11/2 cups vegetable oil (just a lot)
How to make
1. Chop ginger, shallots and garlic. Set aside.
2. To make chicken marinade: clean the chicken, cut into cubes, dry with kitchen tissue so the chicken is not too wet. Sprinkle with salt and pepper.
3. Add shaoxing cooking wine or mirin, soy sauce, stir until evenly mixed.

5. Then add cornstarch and vegetable oil.
6. Stir until all the ingredients are evenly mixed, set aside and put in the refrigerator.
7. Ingredients for stir-frying. Provide sechuan pepper, a handful of sesame oil, and a handful of fried peanuts.
8. Mix 1 tablespoon sesame oil. Set aside.
9. For sechuan pepper oil, heat the oil, then pour the hot oil into the sechuan pepper, set aside.
10. Heat the oil until hot, add the marinated chicken.
11. Put in for about 1-2 minutes, then remove the chicken, and fry again in hot oil until the chicken is browned.
12. Heat new oil, add sechuan pepper, stir-fry briefly. Add chilies, ginger, shallots and garlic.
13. Saute until fragrant and then add the chicken. Add salt, seasoning, mixed sesame oil, sechuan pepper oil. Saute briefly then add the sesame seeds, then stir fry until evenly mixed, turn off the heat, serve.
