Delicious Guatemalan Pepian de Pollo that can pamper your taste buds

Pepián is a thick beef stew from Guatemala. Food This is one of the oldest and most famous dishes. This distinctive cuisine derives from the influence of the colonial past and the native cuisine of the local population. A meat-based stew, thickened with pumpkin seeds, can use beef or chicken (preferably beef) plus other seasonings such as tomatillos, tomatoes, and hot chili peppers. Guatemalan restaurants in the United States usually attribute the dish to Maya origins. This traditional cuisine includes street food that is popular in Guatemalan cities.

This traditional stew of spicy meat is considered by most Guatemalans to be a national dish. The basic ingredients use meat and vegetables topped with a thick sauce, with a combination of roasted spices such as pepitoria and sesame seeds and others.

The taste of the sauce is very distinctive because the ingredients are mashed before being baked, so it is unique in its own way. Usually served with rice and corn tortillas. If you travel to Antigua Guatemala, you must try this dish. But if you want to try making it yourself at home, here's a list of ingredients and recipes typical of Guatemala.

Cooking Time : about 90 minutes (if using chicken) and 2 hours (if using beef)


Ingredients:

• 4 pounds of beef / 5 large chicken breasts

• 2 cloves of onions (quartered onions)

Half a cinnamon stick

• 6 red onions

• 6 black peppercorns

• 1 tbsp coriander seeds

• 1 teaspoon allspice fruit

• 1 tbsp chili flakes

• 1 tbsp pumpkin seeds (pepitoria)

• 1 tbsp sesame seeds

• Dried oregano

• 1 tbsp oil

• 8 tomatoes (500gram)

• 3 cloves of garlic

Water

• Guisquil (mirliton/chayote) or squash

• 2 large potatoes peeled and cut into small pieces)

• 1 tbsp cornstarch

• Coriander leaves for garnish

• Chicken broth


How to make:

Step 1: Put the chicken or beef in a large pot and pour 3 liters of water, then cover. Add salt and quartered onions to the water, cook until cooked.

Step 2 : While the chicken or beef is cooking, we can toast the cinnamon, allspice berries, cloves, pepper and coriander seeds in a pan over medium heat until fragrant. Once cooked, transfer it to a bowl.

Step 3: Roast dried chilies, pumpkin seeds, sesame seeds and oregano over medium heat until the sesame seeds are golden brown. Then grind it into powder.

Step 4 : Heat the oil in a pan, add the onion, whole tomato and garlic and cook until the onion is golden brown. Remove and discard the tomato skin then cut into pieces.

Step 5: Put ground spices and vegetables into a blender, add chicken stock and blend. Pour into a large saucepan and add half a liter of chicken stock.

Step 6: Mix two tablespoons of chicken stock with cornstarch until smooth then stir into the pan. Cook until boiling, stir until the mixture thickens slightly. Add the beef or chicken, potatoes and pumpkin to the skillet, reduce heat to low, cover and simmer for about 30 minutes or until the meat is tender.
