4 cloves garlic

2 whole cloves, roasted

3 pieces of pekak, roasted

3 cardamom pods, roasted

2 cm cinnamon, roasted

How to cook:

1. Boil the meat and goat ribs until half soft with water.

2. Using a blender, grind all the ground spices. Saute ground spices, lemon grass, turmeric leaves, bay leaves, lime leaves, until cooked and fragrant.

3. Put the spices into the stew of goat meat and ribs, add the thin coconut milk, cook until soft.

4. Add thick coconut milk, stir so the coconut milk doesn't break. Enter Sweet Soy Sauce. Cook until done.

Goat Curry Ingredients

400 ml of thin coconut milk

12 shallots

How to Cook Goat Curry:

1. Cut the mutton.

2. Heat thin coconut milk.

3. Add in the mutton pieces.

4. Add lemon grass, bay leaves and lime leaves. 5. Add galangal and ginger. Stir well and cook until the meat is tender.

6. In a separate place, sauté all the ground spices until fragrant and cooked.

7. Put the stir fry into the meat stew pot.

8. Add pepper and Taste Oyster Sauce.

9. Add sugar, salt and thick coconut milk.

10. Stir well and add cayenne pepper. Cook until the gravy is slightly reduced.

Ground spices:

3 candlenuts

1 tbsp coriander

1 cm ginger

1 cm turmeric

1/4 teaspoon cumin

1/4 teaspoon of ground nutmeg

2 cloves of garlic

5 red onions

3 bird's eye chilies

1/4 teaspoon of fennel

1/4 teaspoon of clabet

Cemplung seasoning:

2 cm cinnamon

1 stalk of lemongrass, bruised

5 cloves

1 bay leaf

1 cm galangal

2 kaffir lime leaves

4 cardamom pods

sugar and salt to taste

How to Cook Goat Curry:

1. Saute ground spices, cinnamon, bay leaves, galangal, lime leaves, and lemon grass until fragrant.

2. Enter the mutton. Stir well and cook until it changes color.

3. Add cloves, sugar and salt. Taste correction.

4. Pour coconut milk. Turn down the fire. Cook while continuing to stir until the flavors meld.
